Ingredients
- 4 slices sourdough bread
- 2 ripe avocados
- 1 small lemon (juice)
- 1–2 tablespoons extra virgin olive oil
- Salt and freshly ground black pepper
- Chili flakes or chopped fresh chili to taste
- Optional toppings: 2 eggs (poached or fried), chopped herbs (parsley, cilantro, or chives), a handful of pomegranate seeds or roasted pumpkin seeds
- Optional cheese: feta or crumbled goat cheese
Instructions
- Toast the bread slices until golden brown.
- Prepare the avocados by halving, removing the pit, and scooping out the flesh.
- Mash the avocado in a bowl with a fork, leaving some chunks for texture.
- Mix in lemon juice, olive oil, salt, pepper, and chili flakes to taste.
- Spread the avocado mixture generously on warm bread slices.
- Add an optional poached or fried egg on top and sprinkle with herbs.
- Garnish with additional chili flakes, pumpkin seeds, or pomegranate seeds and enjoy immediately.
Notes
Use fresh lemon juice to prevent browning of the avocado and enhance freshness. Choose crusty bread for the best texture.
