Description
A velvety and fruity Strawberry Tiramisu that brings warmth and comfort in a spoonful, perfect for autumn evenings.
Ingredients
- 500 g fresh strawberries, washed and quartered
- 250 g mascarpone
- 300 ml heavy cream
- 100 g powdered sugar
- 1 tsp vanilla extract
- 200 g ladyfingers
- 150 ml freshly squeezed strawberry juice or mild fruit juice
- Juice of half a lemon
- Optional: fresh mint leaves for decoration
Instructions
- Prepare the strawberries: Blend 100 g strawberries and mix with lemon juice and 2 tbsp powdered sugar. Roughly chop the remaining strawberries and set aside.
- Make the cream: Stir mascarpone with vanilla and 60 g powdered sugar until smooth. Whip heavy cream until stiff and gently fold into mascarpone mixture until fluffy.
- Soak the ladyfingers: Pour strawberry juice into a shallow dish. Quickly dip ladyfingers (do not soak) and layer the bottom of a baking dish with them.
- Spread a layer of mascarpone cream over the soaked ladyfingers, sprinkle one-third of the chopped strawberries on top, and drizzle with some strawberry puree.
- Repeat with two more layers of soaked ladyfingers, cream, and strawberries. Finish with a generous layer of cream.
- Chill: Let the Strawberry Tiramisu soak in the fridge for at least 4 hours, preferably overnight, covered.
- Serve: Before serving, decorate with remaining strawberries and mint.
Notes
For an alcohol-free version, use more strawberry juice instead of rum or liqueur. Always gently fold the cream and be careful not to over-soak the ladyfingers.
