Ingredients
- 2 packs puff pastry
- 3 eggs
- 200 ml plant-based cream alternative
- 150 g grated mild cheese
- 200 g mixed vegetables (pumpkin, mushrooms, onions)
- 150 g diced ham alternative
- 100 g cream cheese
- 2 tbsp honey or maple syrup
- 1 apple (for sweet variant)
- Cinnamon, nutmeg, salt, pepper
- Bread crumbs or gluten-free coating (for variation)
- Optional: crumble ingredients (flour, butter alternative, sugar)
Instructions
- Preheat the oven to 180°C (356°F) with convection.
- Roll out the puff pastry and cut into circles; grease the molds and place the pastry inside.
- Prepare the filling by whisking eggs with the cream alternative, stirring in grated cheese, diced vegetables, spices, and ham alternative.
- Fill the molds 2/3 full with the mixture.
- Bake for 15–20 minutes until the surface is golden brown.
- For the apple tartlets: slice apples thinly, mix with cinnamon and sugar, place on pastry, and top with crumbles. Bake for 12–15 minutes.
- For puff pastry rolls: spread pastry with cream cheese, layer on ham alternative, roll up and slice. Bake for 12–15 minutes.
Notes
Keep puff pastry cold for a flaky texture. Fill equally to avoid overflow. Remember to season well, especially with nutmeg for savory quiches.
