A comforting and creamy Halloumi Tikka Masala, perfect for cozy autumn nights.
Ingredients
- 400 g Halloumi, in 1–1.5 cm thick slices
- 2 tbsp vegetable oil
- 1 large onion, finely chopped
- 3 cloves garlic, finely chopped
- 1 piece ginger (about 2 cm), grated
- 1 can (400 g) diced tomatoes
- 150 g Greek yogurt
- 150 ml plant-based cream or coconut milk
- 2 tsp garam masala
- 1 tsp turmeric
- 1 tsp sweet paprika
- 1/2 tsp chili flakes (to taste)
- Salt and pepper
- Fresh coriander for garnish
Instructions
- Prepare the halloumi by cutting it into slices and patting it dry. In a pan with 1 tbsp oil over medium heat, fry until golden brown (about 2–3 minutes per side). Remove and set aside.
- Make the sauce by sautéing the onion in the remaining oil until translucent. Add garlic and ginger, and sauté briefly.
- Add the spices (garam masala, turmeric, paprika, chili flakes) and roast for a minute.
- Stir in the diced tomatoes and simmer for 8–10 minutes until the sauce thickens.
- Mix in the yogurt and cream, season with salt and pepper.
- Add the halloumi to the sauce and let it simmer on low heat for 5 minutes to incorporate the flavors without boiling.
Notes
For a smokier flavor, you can briefly grill the halloumi before adding it to the sauce. Use room temperature yogurt to prevent curdling.
