Description

A comforting and creamy Halloumi Tikka Masala, perfect for cozy autumn nights.


Ingredients

  • 400 g Halloumi, in 1–1.5 cm thick slices
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, finely chopped
  • 1 piece ginger (about 2 cm), grated
  • 1 can (400 g) diced tomatoes
  • 150 g Greek yogurt
  • 150 ml plant-based cream or coconut milk
  • 2 tsp garam masala
  • 1 tsp turmeric
  • 1 tsp sweet paprika
  • 1/2 tsp chili flakes (to taste)
  • Salt and pepper
  • Fresh coriander for garnish


Instructions

  1. Prepare the halloumi by cutting it into slices and patting it dry. In a pan with 1 tbsp oil over medium heat, fry until golden brown (about 2–3 minutes per side). Remove and set aside.
  2. Make the sauce by sautéing the onion in the remaining oil until translucent. Add garlic and ginger, and sauté briefly.
  3. Add the spices (garam masala, turmeric, paprika, chili flakes) and roast for a minute.
  4. Stir in the diced tomatoes and simmer for 8–10 minutes until the sauce thickens.
  5. Mix in the yogurt and cream, season with salt and pepper.
  6. Add the halloumi to the sauce and let it simmer on low heat for 5 minutes to incorporate the flavors without boiling.

Notes

For a smokier flavor, you can briefly grill the halloumi before adding it to the sauce. Use room temperature yogurt to prevent curdling.
