Description

A heartwarming low-carb dish featuring roasted vegetables and tender turkey strips, perfect for cozy evenings.


Ingredients

  • 500 g turkey breast, sliced into strips
  • 2 tbsp olive oil
  • 1 tsp sweet paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 1 small zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 150 g mushrooms, quartered
  • 1 small red onion, chopped
  • 2 garlic cloves, minced
  • 150 g broccoli florets
  • 100 g cherry tomatoes, halved
  • 50 g grated Parmesan (optional)
  • Fresh herbs for garnish (parsley or thyme)
  • Optional: a splash of lemon juice


Instructions

  1. Preheat the oven to 200°C.
  2. Mix turkey strips with 1 tbsp of olive oil, paprika, cumin, salt, and pepper. Let sit for 10-15 minutes if time allows.
  3. Combine zucchini, bell peppers, mushrooms, onion, and broccoli in a large bowl with 1 tbsp of olive oil, salt, and pepper. Add cherry tomatoes at the end.
  4. Heat an oven-safe skillet and sear the turkey strips for 2-3 minutes per side until browned. Remove briefly.
  5. Spread the vegetables in the pan, place the turkey strips on top, and sprinkle with garlic. Bake for 18-22 minutes until the vegetables are tender and slightly caramelized and the turkey is cooked through.
  6. Sprinkle Parmesan over the dish shortly before the end of cooking and let it melt for 2-3 minutes. Serve with fresh herbs and a splash of lemon juice.

Notes

Ensure even cutting of vegetables and meat for even cooking. For better roasting flavors, use an oven-safe skillet.
