A light and sunny salad that brings summer memories into the autumn kitchen with fresh mango and a zesty lime dressing.
Ingredients
- 3 ripe mangoes, peeled and diced
- 1 large cucumber, seeded and diced
- 1 red bell pepper, finely diced
- 1/2 red onion, finely chopped
- 1 avocado, diced (optional)
- A handful of cilantro leaves, roughly chopped
- 1 small chili pepper, finely sliced (to taste)
- Juice of 2 limes
- 2 tablespoons olive oil
- 1 tablespoon honey or maple syrup
- Salt and freshly ground black pepper
- 1 teaspoon grated lime zest (optional)
Instructions
- Prep all ingredients evenly; cutting them into uniform cubes ensures a pleasant mouthfeel.
- Mix the lime juice, lime zest, olive oil, and honey in a small bowl. Season with salt and pepper to taste.
- Combine the mango, cucumber, bell pepper, onion, avocado, cilantro, and chili in a large bowl.
- Drizzle the dressing over the salad and gently fold it in to avoid mashing the mango. Let it sit for about 5–10 minutes to allow the flavors to meld.
- Serve fresh, although it can be made ahead of time.
Notes
For extra crunch, add roasted cashews or almonds just before serving.
