Description

A light and sunny salad that brings summer memories into the autumn kitchen with fresh mango and a zesty lime dressing.


Ingredients

  • 3 ripe mangoes, peeled and diced
  • 1 large cucumber, seeded and diced
  • 1 red bell pepper, finely diced
  • 1/2 red onion, finely chopped
  • 1 avocado, diced (optional)
  • A handful of cilantro leaves, roughly chopped
  • 1 small chili pepper, finely sliced (to taste)
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • 1 tablespoon honey or maple syrup
  • Salt and freshly ground black pepper
  • 1 teaspoon grated lime zest (optional)


Instructions

  1. Prep all ingredients evenly; cutting them into uniform cubes ensures a pleasant mouthfeel.
  2. Mix the lime juice, lime zest, olive oil, and honey in a small bowl. Season with salt and pepper to taste.
  3. Combine the mango, cucumber, bell pepper, onion, avocado, cilantro, and chili in a large bowl.
  4. Drizzle the dressing over the salad and gently fold it in to avoid mashing the mango. Let it sit for about 5–10 minutes to allow the flavors to meld.
  5. Serve fresh, although it can be made ahead of time.

Notes

For extra crunch, add roasted cashews or almonds just before serving.
