Description

This refreshing lemon-thyme lemonade blends citrus brightness with herbaceous thyme, perfect for cozy moments and seasonal baked goods.


Ingredients

  • 68 organic lemons (approximately 250300 ml fresh juice)
  • 150200 g sugar or 180 ml agave syrup (to taste)
  • 68 sprigs of fresh thyme (plus extra for garnish)
  • 1 liter cold water
  • Optional: 500 ml sparkling mineral water for a fizzy version
  • Ice cubes
  • Lemon slices for serving


Instructions

  1. Prepare thyme-sugar syrup: Warm sugar (or agave syrup) with 250 ml of water in a small pot, stirring until dissolved.
  2. Add two or three thyme sprigs and the zest of one lemon. Bring to a simmer, then remove from heat and let steep for 10–15 minutes.
  3. Strain syrup through a fine sieve into a heatproof vessel and let cool, pressing the thyme lightly to extract flavor.
  4. Squeeze the lemon juice from halved lemons and remove seeds.
  5. Mix the cooled thyme syrup with the lemon juice and remaining cold water in a large pitcher.
  6. Adjust to taste: Add more water or syrup as needed.
  7. For a fizzy version, stir in 500 ml of sparkling mineral water just before serving.
  8. Serve: Add ice cubes, fresh thyme sprigs, and lemon slices to glasses and fill with lemonade.

Notes

Use organic lemons for easy use of the peel. Adjust sweetness and intensity as needed for best results.
